OMG, OMG STOP PRESS!!!!

Jack is actually eating something that everyone else is eating. I think I'm in shock.

Okay, okay so Jack's where mainly just chicken and cheese but HE ATE THEM ALL...

...AND ENJOYED IT.
So we celebrated with home made banana fritters.
And damn they were good.

Many thanks to Aaron from MasterChef for his Chicken Tacos. They were a big hit in this house.
And now for anyone who was wondering what the dish was that Jack was actually eating, according to the MasterChef website it was Five Star Taco but according to the MasterChef magazine we were following it was Chicken Tacos. Below is our finished product v's the MasterChef version. I think it was a damn fine replication.

Here's the recipe:
Chicken Tacos
Serves 4
Cooking time 40 minutes

Ingredients:
TACOS
5 vine ripened tomatoes quartered, seeded
1tbs Tabasco sauce
2 tsp ground cumin
1 lemon, juiced
2 tbs tomato paste
2 jalapenos halved, seeded (we omitted them)
4 chicken breast fillets
8 tortillas
Coriander leaves and lime wedges to serve

TOMATO SALSA
3 vine ripened tomatoes seeded, finely chopped
1 red onion, finely chopped
2 tbs finely chopped corriander
2 tbs olive oil
1 tsp Tabasco sauce
1 tsp ground cumin

  1. Process tomatoes, Tabasco, cumin, lemon juice, tomato paste, jalapenos, and 250ml water in a food processor until smooth. Combine 1/2 tomato mixture with chicken. Cover and refrigerate for 30 minutes.
  2. Strain remaining tomato mixture through a fine sieve into a saucepan. Bring to the boil, then simmer for 10 minutes or until thickened slightly. Cool and reserve.
  3. To make tomato salsa, combine all ingredients in a bowl, then season.
  4. Preheat a greased bbq or chargrill pan over a medium heat. Remove chicken from marinade and cook for 4 minutes or until browned underneath. Turn and cook for a further 5 minutes or until cooked through. Rest for 5 minutes then slice.
  5. Wipe pan clean then toast tortillas for 30 seconds each side.
  6. Top tortillas with chicken then salsa. Scatter with coriander, drizzle with reserved tomato mixture and serve with lime wedges.

I really should be sleeping

But instead I've decided to have a bash at my poor neglected blog. Which I will probably regret since I'm drugged to the eyeballs and for some stupid reason still in pain, hence the not being able to sleep.

So today is surgery day + 1. (For anyone who has not read my incessant whinging and whining on FB lately, I had my 3 remaining wisdom teeth removed).

As much as I'm feeling like shit, I'm a lot better than I expected I would be. The swelling is only minimal and I can't see any bruising yet. I can feel it, so I know it's coming, but so far nothing. According to the discharge paperwork the peak of the swelling is mean to be day 3. Bring it on. I just want it over and done with.

And as much as I've been complimenting my lovely husband on FB, he is still annoying. I don't need to be told again about the wisdom teeth removal you watched on You Tube. I have had one taken out when I was awake. I know what tools they use, I know how it sounds. That's why I had a general this time. Shut up about it already.

Tomorrow I'm going to make some time to backdate a few posts with pics, so be on the lookout for the newbies.

Red and yellow and pink and green...

Actually scratch that. We had no green paint.

However we did have red, white and yellow.

And that was enough to make some awesome paintings for Mummy. ♥

What to do at Scienceworks

The weather today at the Nitty Gritty Super City was brought to you by the Brodrick Boys.

Meanwhile the Brodrick Girl would prefer to laze about the on the floor.

Mini MasterChef

Ever since season 1 of MasterChef last year, Liam has been obsessed. He just loves the show. I got him a MasterChef apron from work (he doesn't know the difference he thinks it's the real thing LOL) and he just about wet his pants he was so excited.

So now all he wants to do it cook - wearing the apron of course.

So today it was toffee with crushed almonds. How proud does he look?
